Fibre:protein fix berry tofu pops

These tofu berry ice lollies are a refreshing way to add more plants into your day. With 5g of fibre and 6g of protein per pop, the tofu creates a deliciously creamy texture, packed with plant-based protein. The berries also provide fibre and beneficial polyphenols to support your gut microbes, making these pops as nourishing as they are delicious!

Ingredients

  • 1 x 300g block silken tofu, drained
  • 200g frozen mixed berries
  • 3 medjool dates, pitted (or 2 tbsp sweetener of choice)
  • Juice of ½ lemon
  • 1 tsp vanilla extract
  • 80g granola (we used Bio&Me blueberry)

Method

  1. Add the tofu, frozen berries, dates or sweetener, lemon juice and vanilla to a blender or food processor and blitz until completely smooth.
  2. Transfer the berry mix to a bowl and stir through the granola (alternatively, you can make layers with berry mix and granola for your ice lollies).
  3. Pour into silicone ice cream moulds (or an ice cube tray) and insert the sticks provided or a wooden ice lolly stick.
  4. Place in the freezer for an hour or until frozen.
