Roasted Sweet Potatoes Stuffed with BBQ Lentils

All the cozy vibes in one dish! These roasted sweet potatoes are perfectly tender (think melt-in-your-mouth soft), stuffed with sweet and smoky BBQ lentils, and finished with a drizzle of creamy tahini sauce. What's not to love?

Baked sweet potato stuffed with BBQ lentils.

This recipe holds a special place in my heart because I first shared it during my very first year of blogging, over 10 years ago! It was one of those recipes I completely forgot about until recently. Fast forward to today, and after a big blog cleanup we had to do to please the Google gods, it had disappeared from the site altogether. Oops! So I'm bringing it back with brand new photos, plenty of step-by-step shots, and a few small improvements!

Meet your new cozy dinner obsession: roasted sweet potatoes stuffed with BBQ lentils and drizzled with tahini yogurt sauce. We made this one twice this week (let's pretend it was for testing purposes), and honestly, I can't get enough of it. The sweet potatoes turn super soft in the oven, while the lentils bring all that spicy, sweet, and smoky BBQ goodness. If coziness could be a dinner, this would be it!

Bonus point: Most of the cooking takes care of itself! Pop the sweet potatoes in the oven. In the meantime, sauté the aromatics and let the lentils simmer. Then all you've got to do is assemble.

Kat, a reader, says: "This recipe was spot on! Our family is trying out more vegetarian recipes to cut down on meat consumption, and it was refreshing seeing a lentil recipe that wasn’t curry or soup. This is going to be one of our new “go tos” for easy and relatively quick dinner recipes! ★★★★★"
